1 Cup rice flour
1/2 cup starch
3/4 cups sugar
1/2 cup rosewater
5 cups milk
3 cups cold water
3/4 cup sliced almonds
Pour 3 cups of water on the starch and sift it into a large pot.
Dissolve the rice flour in the milk and sift this too.
Add it to the pot of the starch & water.
Place the pot on medium heat & stir constantly until the mixture thickens and it covers the back of the spoon.
Now it's time to add the sugar and rosewater, continue stirring until it starts to boil.
To make sure it is thick enough, you can move a fork on the surface & when the fork doesn't leave any trail, your dessert is ready.
Add the sliced almonds and spread half of the mixture into a greased tray.The layer should be about 1 cm.
Add the saffron to the rest of the mixture and spread it into the second dish.
Sprinkle both dishes with some ground pistachios & let it cool to room temperature.
Then place in the fridge for 2 hours.
Cut the dessert into diamond shapes with a sharp knife and arrange them in your serving dish.
It's possible to mold the mixture.Pour the first layer into your greased silicone mold.let it set, then pour the second layer very slowly on the first one & place in the fridge.
